China Chilcano is the brainchild of the one and only José Andrés, along with his phenomenal DC team. Inspired by the diversity of Peru's food scene, the menu is a reflection of its multicultural cuisine. Serving an amalgamation of Native Criollo x Chinese Chifa x Japanese Nikkei cuisines, the dancing yucca, aeropuerto, and salmon donburi took our tastebuds on a journey of new and old Peruvian dishes.

Head Chef Daniel Lugo said China Chilcano is a Peruvian concept, not a Peruvian restaurant. According to chef, it’s a beautiful way to emphasize the cuisines and have a restaurant dedicated to the gastronomic fusion of Peru.
