There is literally something for everyone at Indigo. The restaurant prides itself on its authenticity, bringing years of North Indian family recipes directly to the table with the promise that they present the food exactly as they eat it at home. Indigo also offers an incredible array of vegetarian/vegan/alternative options.

We got to talk with owner Dinesh Tandon about his wife’s cooking, his favorite dishes of hers (a little bit of everything — a scoop of cauliflower, some spicy masala chicken, a bit of dahi lamb), and their vision for the future of the restaurant, which began as a farmers market stand but grew so popular opening a storefront became the only logical next step.
